These were perfection – crispy exterior with the most juicy flavourful inside. Filled with BBQ jackfruit, peppers and more veggies, they’re so filling and satisfying. Great finger food for entertaining guests! (Hint hint – the super bowl is next Sunday!)


  • Canned young jackfruit
  • One onion
  • One green bell pepper
  • One pack of small white mushrooms
  • Vegan butter
  • Sauce of your choice (we used BBQ)
  • Vegan cheese (we used Nafsika’s Garden)
  • Tortillas
  1. Start by coating a frying pan with vegan butter
  2. Strain jackfruit and using a fork pull apart into strands
  3. Place in pan, fry on medium-low heat
  4. Once they start to brown, add sauce of choice
  5. Dice veggies and sauté in a separate frying pan (mushrooms, onion & bell pepper)
  6. Once veggies are softened, move to a separate dish
  7. Place a generous amount of vegan butter in the frying pan you used for your veggies
  8. Place your tortillas one by one face down. Place your veggies, jackfruit and cheese on top, topped with another tortilla
  9. Once it’s started to brown and get crispy, using a big spatula, flip the quesadilla and repeat on the other side
  10. Move to a cutting board, cut into desired triangles and enjoy with your favourite dips! (Guacamole, sour cream & salsa are ours)
