One of my favourite middle eastern dishes, falafels! We promise these will not disappoint. Crunchy on the outside with a dense delicious centre, these are a healthy way to add some culture to your weekly meal plan!


  • 1 cup of dry chickpeas
  • 3 cloves of fresh garlic (minced)
  • One small onion (chopped)
  • 1/3 cup of fresh chopped parsley
  • 1 lemon (juiced)
  • 1 tbsp of maple syrup
  • 1 tsp of cumin
  • 1 tsp of salt
  • 1 tsp of hot sauce
  • 1/2 cup of all purpose flour
  • 1/2 tsp of baking soda
  • 1 tbsp of chili oil
  • 2-3 tbsp of vegetable oil
  • Serve with your choice of sides, we chose basmati rice and balsamic glazed salad!


  1. Soak your chickpeas in a bowl of water overnight. They will absorb some of the water and grow in size. You should end up with around 2 cups the next day
  2. Once your chickpeas are soaked, strain them and place in a bowl
  3. Preheat your oven to 375 degrees. Place chickpeas in a food processor (a high powered blender works if you don’t have one) and pulse until almost smooth
  4. Remove chickpea mixture and set aside in a large mixing bowl. Next add your onion, garlic, chili oil, hot sauce, chopped parsley, lemon juice, maple syrup, salt, cumin and baking soda into the food processor and pulse until almost smooth
  5. Pour overtop of chickpeas and stir to combine. Slowly add your all purpose flour as you are mixing to thicken it up
  6. Heat up a large frying pan on medium heat and add your vegetable oil
  7. Form 10-12 small patties out of chickpeas mixture and place each in your pan, avoid overcrowding
  8. Fry for 3-4 minutes each side or until golden brown and crunchy. Remove from pan and place on baking tray
  9. Bake patties for 5-10 minutes at 375, let cool for 5 minutes after removing
  10. Serve and enjoy!
