SLOW COOKER BLACK BEAN CHILI

This is a great post workout meal! Healthy and packed with protein, you’ll be coming back for seconds!

YOU WILL NEED:

  • 1 jar of tomato sauce
  • 1 large onion (diced)
  • 2 cloves of garlic (diced)
  • 1-2 cups of veggie ground
  • 1 tbsp of vegan butter
  • 1 can of black beans
  • 1 can of peaches and cream corn
  • 2 tbsp of chilli powder
  • 1 tbsp of favourite hot sauce
  • 1/2 tbsp of cumin
  • 1/2 tbsp of dried oregano
  • 1 cup of water
  • 1/2 cup of vegan sour cream (optional)
  • 1/4 cup of fresh diced chives (optional)
  • 1/4 cup of shredded vegan cheddar (optional)

STEPS:

  1. Heat up a large frying pan on medium heat and add your vegan butter
  2. Add your diced onions, garlic and veggie ground once pan is hot
  3. Cook for 10 minutes or until onions become soft
  4. Add tomato sauce, black beans, corn, chilli powder, hot sauce, cumin, oregano and water to your slow cooker pot
  5. Add your veggie ground mixture to your slow cooker pot and stir to combine
  6. Cook on medium to high heat in slow cooker for around 5-6 hours stirring occasionally
  7. Top with a spoonful of vegan sour cream, chopped chives and a sprinkle of vegan cheddar! Serve and enjoy
