CREAMY VEGAN SCALLOPED POTATOES

Scalloped potatoes have always been the perfect comfort food. We added more depth to this dish by adding chopped mushrooms and vegan bacon! It turned out to be amazing. We hope you and your family enjoy it as much as we did!

YOU WILL NEED:

  • 5 large russet potatoes (thinly sliced)
  • 4 cups of white mushrooms (chopped)
  • 4 cloves of garlic (diced)
  • 4 strips of veggie bacon (chopped)
  • 3-4 cups of cashew milk
  • 1 tbsp of onion powder
  • 1 tsp of paprika
  • 1-2 tbsp of fresh parsley (diced)
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • 4 tbsp of nutritional yeast
  • 2 tbsp of all purpose flour
  • 2 tbsp of vegan butter
  • 1-2 tbsp of fresh chives (diced)
  • 1/2 a cup of vegan cheddar sheds

STEPS:

  1. Start with a large skillet on medium low heat and add your vegan butter
  2. Once pan is heated, add your garlic, mushrooms, onion and veggie bacon
  3. Cook until veggies begin to sweat and turn golden brown
  4. Stir in your paprika, onion powder, salt and pepper
  5. Next slowly stir in your cashew milk, make sure not to pour in too quickly
  6. Once all your milk is in the pan with your veggies, stir in your nutritional yeast
  7. Slowly add your all purpose flour to thicken up your sauce and lower heat
  8. While your sauce is simmering preheat your oven to 350 degrees and get a large casserole dish ready
  9. add a couple spoonfuls of your sauce on the bottom of your casserole dish, then begin to layer your sliced potatoes
  10. Each layer of potatoes you finish, the next layer should be a generous amount of your sauce. The goal is to make sure that all the potatoes are coated in your sauce!
  11. Make sure you finish the top layer with your sauce then sprinkle on your favourite vegan cheddar sheds
  12. Cover your casserole dish with lid (or foil) and bake for 20 minutes
  13. After 20 minutes remove your lid and continue baking for 45 minutes
  14. Remove your casserole dish from the oven and let cool for 10 minutes
  15. Plate your potatoes and top with a scoop of vegan sour cream and chopped chives, enjoy!
