Not only is this dish healthy, it’s also very quick to make and super tasty! We love to use fried tofu but you can easily substitute for tempeh or another vegan meat alternative!


  • 1 pack of thick rice noodles
  • 1 block of extra firm tofu (diced into cubes)
  • 1 head of broccoli (diced)
  • 1/2 of an onion (sliced)
  • 2 cloves of garlic (diced)
  • 2 tbsp of green onion (diced)
  • 1tbsp of sesame oil
  • 1 tbsp of vegetable oil
  • 1/2 tsp of dried chili flakes
  • 1 bottle of store bought pad Thai sauce
  • 1-2 tbsp of crushed roasted peanuts


  1. Start with a large skillet on medium heat and add your vegetable oil
  2. Once pan is hot throw in your diced garlic, thinly sliced onion, broccoli florets and dried chili flakes
  3. Sauté in pan until your broccoli is tender then lower heat
  4. In a separate pot, boil some water and add your rice noodles
  5. Once noodles are cooked remove and place into a bow of cold water, let rest for 5 minutes
  6. Heat up your air fryer to 375 and add your cubes tofu, if you don’t have an air fryer just add them into the pan with your broccoli
  7. Cook tofu for 6 or 7 minutes until crispy then mix the cubes in with your broccoli
  8. Add your sesame oil overtop of your veggies and tofu and continue to cook
  9. Strain your rice noodles and add them into the pan with your veggies and tofu
  10. Pour your pad Thai sauce overtop and stir, lower heat and let it cook for another 5-10 minutes
  11. Plate your pad Thai and top with diced green onion and crushed peanuts, enjoy!
