BUFFALO CAULIFLOWER LETTUCE WRAPS

If you’re looking for a light and healthy dinner this is the dish for you! Crunchy breaded cauliflower bites with a tangy dill mayo drizzle. This meal is already low carb but by replacing a tortilla with a romaine leaf it makes it even healthier while adding a satisfying crunch!

Total time: 35 minutes

YOU WILL NEED:

For the toppings-

  • 1 head of cauliflower
  • 2 cups of vegan breadcrumbs
  • 1/4 cup of all purpose flour
  • 2 cups of cashew or almond milk
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • 1 tbsp of extra virgin olive oil
  • 1 head of romaine lettuce
  • 1 tomato
  • 1/2 of an onion

For the sauce-

  • 1/4 cup of vegan mayo
  • 1 tbsp of water
  • 1 tbsp of maple syrup
  • 1 tbsp of Buffalo hot sauce or your favourite hot sauce (sriracha works beautifully as well)
  • 2 tbsp of vegan mayo
  • 1 tbsp of fresh dill
  • A sprinkle of garlic powder

INSTRUCTIONS:

  1. Chop your cauliflower into bite size pieces and set aside
  2. Pour your vegan milk into a mixing bowl and pour your breadcrumbs, salt and pepper onto a separate plate
  3. Set your air fryer to 375 degrees and let it pre heat for 5 minutes
  4. add your flour into your bowl of vegan milk whisking constantly to avoid clumping. The flour will thicken the milk to help it hold onto your breadcrumbs!
  5. Coat your cauliflower bites in milk and flour mixture followed by tossing in breadcrumbs
  6. Place bites in air fryer and cook for 10 minutes. Give them a shake half way to make sure they are cooking evenly
  7. While you wait, in a bowl mix your vegan mayo, water, maple syrup and buffalo hot sauce. The maple syrup gives it a nice sweetness, if you like more spice add more hot sauce
  8. Prepare your romaine leaves. Chop your tomatoes and onions however you prefer! Other toppings can be added to your liking
  9. In a small bowl mix together 2 tbsp of vegan mayo, 1 tbsp of fresh dill and a sprinkle of garlic powder
  10. Once your cauliflower is cooked toss them in your buffalo sauce and place in lettuce wraps followed by toppings
  11. Finally drizzle with your garlic dill mayo and enjoy!
