Growing up I used to work in various restaurants, one being Boston pizza. I fell in love with a pizza on their menu called the pierogi pizza! After going vegan we were curious as to how we could recreate this delicious dish. This is our take on it! With a garlicky base topped with vegan cheddar shreds, vegan bacon and fresh green onions from the garden! It’s a great way to mix up pizza night and try new flavours.

Total time: 30 minutes
YOU WILL NEED:
- 1 large pizza crust (we used one from a bakery down the road)
- 1/4 cup of vegan Cesar dressing
- 1 tbsp of hot chili oil
- 1 large russet potato
- 1 cup of vegan cheddar shreds
- 3 strips of vegan bacon
- 1 tbsp of fresh green onions
INSTRUCTIONS:
- Preheat your oven to 400 degrees. Cut your potatoes into thin slices and coat with your chili oil
- Bake your potatoes for 10 minutes or until soft
- Prepare your pizza crust and sauce it with your vegan Cesar dressing
- Evenly top with your thinly sliced spicy potatoes
- Next sprinkle with your vegan cheddar shreds
- Slice bacon into thin strips and place on top. Bake pizza for 10-15 minutes or until crust turns golden brown
- Remove from oven and top with sliced fresh green onions
- Slice pizza and serve with vegan sour cream! Enjoy
