VEGAN PIEROGI PIZZA

Growing up I used to work in various restaurants, one being Boston pizza. I fell in love with a pizza on their menu called the pierogi pizza! After going vegan we were curious as to how we could recreate this delicious dish. This is our take on it! With a garlicky base topped with vegan cheddar shreds, vegan bacon and fresh green onions from the garden! It’s a great way to mix up pizza night and try new flavours.

Prep time: 15 minutes

Cook time: 20 minutes

Total time: 30 minutes

YOU WILL NEED:

  • 1 large pizza crust (we used one from a bakery down the road)
  • 1/4 cup of vegan Cesar dressing
  • 1 tbsp of hot chili oil
  • 1 large russet potato
  • 1 cup of vegan cheddar shreds
  • 3 strips of vegan bacon
  • 1 tbsp of fresh green onions

INSTRUCTIONS:

  1. Preheat your oven to 400 degrees. Cut your potatoes into thin slices and coat with your chili oil
  2. Bake your potatoes for 10 minutes or until soft
  3. Prepare your pizza crust and sauce it with your vegan Cesar dressing
  4. Evenly top with your thinly sliced spicy potatoes
  5. Next sprinkle with your vegan cheddar shreds
  6. Slice bacon into thin strips and place on top. Bake pizza for 10-15 minutes or until crust turns golden brown
  7. Remove from oven and top with sliced fresh green onions
  8. Slice pizza and serve with vegan sour cream! Enjoy
