1 can of chickpeas (strained)
¼ cup of vegan mayo
2 tbsp of hummus
1 tbsp of water
½ a red onion (finely diced)
2 cloves of fresh garlic (minced)
1 tsp of sriracha
½ a red bell pepper (diced)
1 tbsp of dijon mustard or spicy mustard
A pinch of fresh or dried dill
1 tbsp of lemon juice
A pinch of salt and pepper
- Pour your strained chickpeas into a large bowl and mash with the back of a fork. You could use a hand blender or a food processor, just dont pulse it too much. You want some texture to the salad!
- Once your chickpeas are mashed add all remaining ingredients and mix well. Chill in the fridge before serving!
