CHICKPEA SALAD – EASY AND VEGAN

This chickpea salad is amazing. If you’re looking for a quick, easy and delicious recipe for lunch or meal prep then look no further! It has great texture and the flavours work so well together. It’s made with similar ingredients to a tuna salad, including vegan mayo and raw onions. This recipe is a super healthy and filled with plant based protein! I don’t know about you, but sometimes we just want something quick and easy to satisfy our cravings. This doesn’t take long at all to prep and has zero cook time. Plus you can make it all in one bowl. (Who doesn’t love less clean up?!)

We had this chickpea salad served as a sandwich with fresh crisp lettuce! It would also be great served on a bed of greens or on its own. This recipe saves great in the fridge as well, just pack in an airtight container and you’ll have lunches ready to go! We hope you enjoy this simple recipe as much as we did. We all live very busy lives and our schedules can get very hectic. Sometimes, you don’t have to sacrifice flavour to save time!

Ingredients

  • 1 can of chickpeas (strained)

  • ¼ cup of vegan mayo

  • 2 tbsp of hummus

  • 1 tbsp of water

  • ½ a red onion (finely diced)

  • 2 cloves of fresh garlic (minced)

  • 1 tsp of sriracha

  • ½ a red bell pepper (diced)

  • 1 tbsp of dijon mustard or spicy mustard

  • A pinch of fresh or dried dill

  • 1 tbsp of lemon juice

  • A pinch of salt and pepper

Directions

  • Pour your strained chickpeas into a large bowl and mash with the back of a fork. You could use a hand blender or a food processor, just dont pulse it too much. You want some texture to the salad!
  • Once your chickpeas are mashed add all remaining ingredients and mix well. Chill in the fridge before serving!
  • Serve as a sandwich, in a wrap, or as a topper to a salad! Its as simple as that. We hope you enjoy this easy lunch fix.
