VEGAN “LOBSTER” ROLLS

Before we became vegan, both Reyhan and I were pretty big seafood lovers. Once we realized the damage the animal agriculture and the fishing industries were inflicting on our planet (not to mention the animals) we quickly started coming up with ways to recreate our favourite seafood dishes! Nowadays, a vegan diet doesn’t mean you need to eat strictly lettuce and carrots. There are so many ways to recreate your childhood favourites! These vegan lobster rolls are made using chanterelle mushrooms. Chanterelle mushrooms are a bit on the expensive side but they are by far our favourite little fungi friend. To make these rolls taste like seafood we added some nori (dried seaweed). We topped our rolls with fresh romaine lettuce and creamy avocado slices! You can top these rolls however you’d like but we definitely recommend some sort of crisp lettuce to add a bit of crunch! Ingredients

  • 1 cup raw cashews

  • 1 tsp dijon mustard

  • 2 garlic cloves, minced

  • 1/2 tsp smoked paprika

  • About 3-4 cups of chanterelle mushrooms. Oyster mushrooms would work well too!

  • 2 tbsp vegan butter

  • 1 tbsp nori, broken up into small bits
