These delicious fully vegan kebabs over rice take no time at all to whip up and are so juicy and flavourful! Loaded with fresh onions, parsley and a blend of spices for an authentic flavour. For the veggies we topped it with chopped cucumber, tomatoes and balsamic glaze! It’s such a fresh tasting meal! We love to cook dishes like this when we are really craving the warmer weather. Reyhan and I both used to love going out for shawarma and kebabs before we went vegan. It makes us so happy that we get to recreate our favourite dishes but cruelty free. There are so many great vegan meat alternatives nowadays that are made with great ingredients. For this recipe, we used Impossible meat ground. The more we choose to put plants our plate, the better for the planet, the animals and our health!

KEBABS OVER RICE

1 small onion
1 roma tomato
1/2 small cucumber
3 cloves garlic
2 tbsp fresh parsley
1 pack Impossible veggie ground (Beyond Meat would work as well
1/4 tsp smoked paprika
1/4 tsp cumin
2 tbsp nutritional yeast
2 servings of jasmine or basmati rice
2 tbsp oil for frying
2 tbsp balsamic vinaigrette
2 tbsp vegan feta cheese
Directions
- Prep: Slice onion in half and finely dice the one half, while leaving the other half sliced into thin strips. Chop Roma tomato, cucumber garlic and parsley. Preheat a large skillet and add a splash of oil. Also preheat a pot with the 2 servings of rice and appropriate amount of water. Set to simmer.
- In a mixing bowl, add impossible veggie ground, the finely diced half of the onion, garlic, parsley, paprika, cumin, nutritional yeast and a sprinkle of salt and pepper. Use hands to form mixture into kebab shapes and pan fry for 10 minutes turning often to ensure each side gets cooked. Stir rice to ensure it doesn’t burn.
- Plate rice and top with cooked impossible kebabs, add chopped tomato, cucumber and sliced onion. Drizzle whole plate with balsamic dressing and crumble vegan feta. enjoy.
