This mac and cheese recipe uses simple ingredients and only takes around half an hour to whip up! It has a thick, velvety cheese sauce, penne noodles and a crunchy oat crust! CRUNCHY OAT TOPPED MAC & CHEESE

- For cheese sauce
1/3 cup raw or roasted cashews
1 cup water
1/2 tsp garlic powder
1/4 tsp paprika
1/4 tsp chilli powder
1/4 tsp turmeric for colour
Salt and pepper to taste
- For crunchy oat top
1/4 cup One Degree Organics sprouted quick oats
1 tbsp nutritional yeast
Salt and pepper
- Remaining ingredients
2 servings dried pasta noodle of your choice
1/2 red bell pepper
2-3 pieces of veggie bacon
Directions
- Prep: Dice red bell pepper and finely dice bacon into bits. To a blender, add all sauce ingredients and blend until smooth, set aside. Preheat a large pot of water for your noodles and salt generously. Preheat a small frying pan on medium heat and add a splash of cooking oil. Preheat oven to 400 degrees.
- Once pan is fully heated, add diced bell pepper and veggie bacon bits to the pan. fry for 2-3 minutes or just until peppers soften. Pour cheese sauce into the pan and lower heat. Add noodles to pasta water.
- Cheese sauce will thicken as it cooks. Remove pasta from water and strain. Pour pasta noodles into the sauce pan and fold to fully coat noodles in sauce. Use a large spoon to scoop some noodles into two oven safe dishes.
- Top noodles with oat crust ingredients and bake for 10 minutes or until oat top looks crunchy and golden brown. Serve and enjoy.
